Spinach or Kale Quiche
No Crust Quiche
4 eggs beaten 6 - 8 slices cooked bacon
2 cups half & half milk 4 oz fresh spinach or lacinato kale
1/2 tsp salt & pepper to taste 1/4 lb swiss cheese
dash of nutmeg 1/4 cup bisquick
Crumble bacon, tear spinach and shred swiss cheese place on the bottom of a greased deep pie dish or casserole dish. Beat, by hand, eggs, half & half, salt and bisquick together. Pour over bacon, spinach and cheese, place in a preheated oven 425 degrees for 15 minutes. Turn temperature down to 325 degrees and bake for about 40 minutes or until a knife inserted in the center comes our clean. Let stand for about 10 minutes and serve. The bisquick settles and forms a slight crust on the bottom of the quiche. You can sprinkle a little extra cheese on top at the end of cooking if you like.
